CHEESY FLYING FISH “SANDWICHES”

Ingredients

  • 1 package flying fish
  • Juice of 1 lime
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ½ tsp pepper sauce
  • 1 tbsp fresh minced green seasoning
  • (chive,thyme,shadon beni)
  • 2 cloves garlic, grated
  • ½ cup grated cheddar cheese
  • ¼ cup mayonnaise
  • 2 tsp mustard
  • 1 cup cornmeal
  • 1 egg, lightly beaten
  • 1 cup flour
  • Oil for frying

Directions

  1. Wash fish and pat dry. Season with lime juice, salt, pepper, pepper sauce, garlic and green seasoning. Leave to marinate for at least 1 hour.
  2. In 4 separate bowls, place cheese, flour, egg and cornmeal.
  3. Mix the mayonnaise and mustard together. Spread a little of this mixture on one fillet.
  4. Place a little cheese along the center of the fillet. Top with another fillet also spread with a little of the mayonnaise mixture, to make a sandwich. Dip each fish “sandwich” first into the flour, then egg and then cornmeal. Ensure the fillets are covered completely with each coating. Repeat until all the fillets are used.

  6. Heat a sauté pan over medium heat. Add oil to cover the bottom of the pan. Fry the fish “sandwiches” in the hot oil, turning once during cooking. Drain on absorbent paper and serve.
