Ingredients

  • 3 cups corn meal
  • 18 ochroes
  • 2 cups water
  • 3 cups coconut milk
  • 4 pimentos (red preferably)
  • 3 vegetable stock cubes
  • 2 tbsp vegetable oil
  • 2 medium size onion, chopped finely
  • 2 cloves garlic, crushed
  • 2 tbsp butter

Directions

  1. Cook onions, garlic, and pimento peppers in heated oil for 5 minutes.
  2. Add stock cubes, butter, water and coconut milk. Bring to a boil.
  3. Add ochroes and cook for 8 minutes.
  4. Place corn meal in pot a little at a time stirring briskly with a whisk. Mixture should be fairly stiff.
  5. Place in a greased dish, shaping coo coo to the size of the dish with back of spoon. Allow to cool slightly and serve.
