CORN PIE

Ingredients

  • 1 can cream style corn
  • 1 can whole kernel corn, drained
  • 1 cup evaporated milk or cream
  • ½ cup finely chopped onion
  • ¼ cup chopped pimento peppers
  • ½ tsp pepper sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp all purpose seasoning
  • 1 tsp chopped fresh parsley
  • 2 eggs, beaten
  • Hot water

Directions

  1. Preheat oven to 350 degrees F. Lightly grease a baking dish with margarine or spray lightly with cooking spray.
  2. Combine cream style corn, whole kernel corn, onion, and pimentos.
  3. In a separate bowl, mix together the milk, eggs, parsley, pepper sauce, all purpose seasoning, salt and black pepper. Add to the corn mixture and stir to combine. Pour into prepared dish.
  4. Place the dish in a larger dish. Add the hot water to the larger dish just until it reaches up halfway up the side of the smaller dish.
  5. Bake for 30 – 35 minutes or until a knife comes out clean when inserted.
