  • 1½ lbs flour
  • 6 tsp bakiing powder
  • 2 cups sugar
  • 2 tsp ground cinnamon
  • 3 tsp ground nutmeg
  • ½ tsp ground cloves
  • ½ lb butter
  • 1 finely grated fresh coconut
  • 1½ cups water
  • 2 tsp vanilla essence
  • 2 eggs
  • 2 cups raisins
  • 2/3 cup chopped cherries, green and red
  • ½ cup sugar syrup
  • Sugar for sprinkling


  1. Preheat oven to 350 degrees F. Lightly grease two loaf/bread pans and set aside.
  2. In a large bowl, combine flour with sugar, baking powder and dried spices. Add butter and mix into the flour.
  3. Mix coconut with water, and eggs, stir briskly .
  4. Add to flour mixture with a little more water if needed to make a soft dough.
  5. Add fruits and stir.
  6. Spoon batter into the prepared loaf pans.
  7. Bake for about approximately 1 hour and 15 minutes then brush the sweet bread with a sugar syrup and sprinkle with granulated sugar.
  8. Place in oven for another 10 minutes.
  9. Remove from oven and let sit for approximately 5 minutes before removing from pan. Let cool a little before slicing.
  10. Sugar syrup – Add 2 cups granulated sugar and 1 cup water to a small pot. Bring to a boil, stirring frequently until the sugar is dissolved. Remove from heat and cool. Use as desired. The remainder may be stored in refrigerator for up to 1 month.

    I made this following the recipe exactly except I added some tonka bean, I mixed the vanilla and almond essence and added a little bit of grated lime peel to the eggs. Very, very good!!!

    Also, 375 was too high a temp. Outside cooked but not inside so I turned it down to 325 for an extra half hour. Next time I will put it on 350. Was very glad I doubled the recipe!
