Ingredients

  • 2 ½ cups diced watermelon, seeds removed
  • 2 small tomatoes, diced
  • ½ small onion, diced
  • 1 ½ tsp chopped shadon beni or cilantro
  • 1 small clove garlic, grated
  • ½ small scotch bonnet pepper, finely chopped (optional)
  • Juice of ½ lime
  • ½ tsp salt
  • ¼ tsp ground black pepper

Directions

  1. Place the ingredients in a bowl and mix gently to combine. Refrigerate for at least 1 hour before serving to allow the flavors to blend.
