FRESH GREEN SEASONING OR

Ingredients

  • 12 bundles chive (green onions)
  • 6 sprigs broad leaf thyme
  • 3 – 4 twigs small (fine) thyme
  • 12 blades shadon beni
  • 3 heads garlic
  • 24 pimento peppers
  • Small piece scotch bonnet pepper (optional)
  • 1 tsp salt
  • 2 clean sterlised jars

Directions

  1. Rinse and chop chives, broad leaf thyme and chadon beni. Strip the small thyme off the hard stems. Peel garlic cloves. Wash and seed the seasoning peppers. Add the scotch bonnet pepper if using.
  2. In batches, add the seasonings to a food processor and puree to desired consistency. A little water may need to be added.
  3. When completed add salt and mix well. Put in bottles and store in refrigerator. Seasoning will keep up to 3 months.
