PIG FOOT SOUSE 2

Ingredients

  • 4 pounds pig's feet, chopped
  • 4 cloves garlic minced
  • 1 onion thinly sliced
  • 1 scotch bonnet pepper chopped (seeds and stem removed)
  • 1 1/2 cups fresh squeezed lime juice
  • 3 to 4 cups water
  • 1 teaspoon salt
  • 2 cucumbers peeled and chopped
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Place the cut up feet in a large pot, cover with salted water, and cook over medium heat until the meat is tender (about 2 hours). Add more water if necessary. Remove the meat from the water, rinse in cold water, and drain. You can also use a pressure cooker to cook the meat faster.

  2. In a large bowl combine the cooked meat, garlic, onion, pepper, lime juice, water, salt, cucumbers, and ground pepper.

  3. Marinate for at least 6 hours. Serve cold.
