Brocolli and Corn Rice


  • 4 - 5 cups cooked white rice
  • 3 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 medium onion, diced
  • 2 cloves garlic, finely chopped
  • 1 tbsp chopped celery
  • 3 blades chive, chopped
  • 1 bunch of small thyme, leaves stripped off stem
  • 1½ cups chopped broccoli florets
  • 1 can whole kernel corn, drained
  • 1½ tsp all purpose seasoning
  • Salt and pepper to taste


  1. In a large pot, heat the oil over medium heat.
  2. Add the onion stirring for a few minutes. Add the garlic and continue cooking for an additional minute.
  3. Add the broccoli, celery, thyme leaves and chive cook for 1 minute. Add the corn and mix
  4. Sprinkle the vegetable mixture with the all purpose seasoning, salt and pepper.
  5. Add the rice and soy sauce and mix well.
  6. Cover the pot and let continue to cook over a low heat for about 3 minutes stirring occasion
