Trio of Ground Provision Pie


  • 2 lbs yellow sweet potatoes, peeled
  • 2 lbs dasheen, peeled
  • 2 lbs cassava peeled
  • 3 cups grated cheese
  • 20 leaves dasheen bush, cut up
  • Milk
  • 6 flavored peppers
  • 1 bundle celery finely chopped together
  • 1 small red onion
  • Salt and pepper to taste

  1. Boil each provision separately until cooked. Place in separate bowls.

  2. Mash each provision in bowls adding milk, ½ cup or less cheese, a little chopped seasoning and 1oz butter. Mix together all ingredients in each bowl one at a time and add a little salt and pepper to taste.

  3. Steam dasheen bush with 1oz butter and a little seasoning, salt and pepper to taste until all the liquid has evaporated and the bush is cooked.

  4. In a rectangular or square buttered baking dish 3’ deep, place cassava smoothing out in an even layer. Place a layer of dasheen bush, then an even layer of the mashed dasheen, followed by another layer of dasheen and a final layer of mashed sweet potato. Sprinkle remaining cheese over the top.

  5. Place in preheated 350 degree F oven and bake until golden brown for approximately 20 – 30 minutes. Remove and let cool. Cut and serve with desired menu.
