Ziggy Rankin's Corned Beef and Rice

Ingredients

  • 2 tins corned beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 – 4 blades chives, chopped
  • 1 tbsp fresh chopped celery
  • 1 large sweet pepper, diced
  • 2 medium tomatoes, chopped
  • 1 tbsp fresh chopped parsley
  • 2 blades chadon beni, chopped
  • 3 tbsp ketchup
  • Few dashes pepper sauce
  • 3 tbsp oil
  • Cooked white rice

Directions

  1. Heat oil in pot over medium heat. Add the onion, garlic and sweet pepper. Cook for 2- 3 minutes.
  2. Add the corned beef and mix into the vegetables.
  3. Add the tomatoes, fresh herbs and ketchup. Let cook for 5 – 10 minutes.
  4. Add pepper sauce. Taste and adjust seasonings if necessary.
  5. Serve with white rice.
