CREOLE BAKED PORK CHOPS

Ingredients

  • 6 - 8 pork chops
  • 6 cloves garlic
  • Fresh green seasoning - chive, thyme, shadon beni
  • 1 – 2 tsp seasoning salt
  • ½ cup ketchup
  • Worcestershire sauce
  • Few dashes of bitters
  • 1 – 2 tbsp soy sauce
  • 1 medium onion
  • 5 seasoning peppers (pimento)
  • 1 - 2 limes

Directions

  1. Wash pork chops in water mixed with the juice from the lime. Pat dry.
  2. In a baking dish place chops in a single layer.
  3. Grind or cut up green seasoning with garlic and rub into pork chops with all other ingredients except ketchup, onion and seasoning peppers.
  4. Leave to marinate overnight in refrigerator
  5. Next day, slice onions, seasoning peppers and add to chops. Add the ketchup and rub into chops.
  6. Cover dish with foil and bake in a preheated moderate oven 350F for 1 - 1½ hours or until the chops are cooked through. Cooking time will depend on the thickness of the chops.
