  • 2 large packs instant mashed potatoes
  • 1 lb minced beef
  • 2 – 3 cloves garlic, chopped
  • ½ cup green seasoning (thyme, chives, shadon beni, celery, finely chopped)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp all purpose seasoning
  • 3 tbsp oil
  • 1 large onion, diced
  • 2 carrots, diced
  • 1 large sweet pepper, diced
  • ½ cup whole kernel corn
  • 1 tbsp tomato paste
  • 2 cups grated cheddar cheese


  1. Season minced meat with salt, pepper, garlic and green seasonings. Refrigerate for at least 1 hour. Prepare the mashed potatoes as directed and set aside.
  2. In a large frying pan, heat oil over medium high heat. Add the onions and sauté until tender. Add the minced meat and cook until the meat is browned. Add the carrots and sweet peppers. Continue to cook for another 5 minutes. Add the corn and the tomato paste. Let simmer for 5 – 10 minutes. Taste and adjust seasoning if necessary.
  3. Preheat the oven to 375 degrees F. Lightly grease a casserole dish with margarine or spray with cooking spray. Spread half of the mashed potatoes in the dish. Top with the meat mixture. Spread the remaining potatoes over the meat ensuring that the potatoes cover all the meat. Sprinkle the grated cheddar cheese on top.
  4. Bake in the preheated oven for 25 – 30 minutes or until the top is golden brown. Remove from oven and let rest for 5 minutes before serving.
