Crisp Oat Crusted Fillet of Red Snapper


  • 6 fillets of red snapper (6 – 8 oz each)
  • 3 cups rolled oats, processed
  • 1 cup breadcrumbs
  • 4 blades chive
  • 3 sprigs celery
  • 6 flavoured peppers
  • 8 cloves garlic
  • ½ small onion
  • 1 cup oil
  • Salt and Pepper to taste
  • 2 eggs for egg wash
  • Flour
  • Oil for frying
  • Garlic and herb butter


  1. Blend celery, garlic, onion, chive and peppers together in food processor and place in a bowl. Add oil, salt and pepper and mix together.
  2. Place snapper in mixture to marinate for at least 3 hours before cooking time.
  3. Prepare baths for coating of fish (egg wash, flour, oats and breadcrumbs).
  4. Heat oil in frying pan for frying: just enough to cover the base of the pan. Fry until golden brown in each side.
  5. Place on paper to drain and keep warm until ready to serve. Sprinkle with garlic and herb butter.
