KEN’S CASSAVA PONE

Ingredients

  • 2-2½ lbs cassava
  • 1 dry coconut
  • 1 cup sugar
  • 2 tsps. mixed essence
  • ½ lb raisins or soaked mixed fruit alcohol
  • ¼ lb pumpkin
  • dash bitters (optional)
  • butter
  • ¼ cup milk
  • ¾ cup water
  • black pepper
  • dash of cinnamon

Directions

  1. Peel cassava and grate – set aside. Peel off back of dried coconut and grate – set aside. Peel and grate pumpkin.

  2. Grease a large oblong dish or pan and preheat oven at 350.

  3. In a large mixing bowl combine all ingredients thoroughly except butter.

  4. Place in greased baking dish, place pats of butter on top and bake until set and lightly browned about 45 minutes. Cool before cutting.
