- 1 head romaine lettuce, chopped
- 2 cups arugula lettuce
- 15 – 20 cherry tomatoes, halved
- Small wedge of fresh parmesan cheese, thinly sliced
- Generous pinch of salt
- Generous pinch of black pepper
- Juice of 1 large lime
Place lettuce in a large bowl.
Drizzle with lime juice and sprinkle with salt and pepper. Toss well.
Add the tomatoes and toss again.
Add the shaved parmesan cheese and gently mix in.
Refrigerate until ready to serve.
