• 2½ cups icing sugar, sifted
  • 4 – 5 tbsps milk or cream
  • ¼ tsp finely grated lime zest
  • Juice of 1/2 lime
  • A little extra sugar for sprinkling


  1. Put icing sugar and zest in a bowl. Add the lime juice and stir.
  2. Add a little milk and stir into the sugar mixture. Keep adding the milk, 1 tbsp at a time, stirring until the icing is smooth and a fairly thick consistency. You may need to add a little more sugar if the icing is too thin.
  3. Use to drizzle over your favourite cookies and cakes.
