- 2½ cups icing sugar, sifted
- 4 – 5 tbsps milk or cream
- ¼ tsp finely grated lime zest
- Juice of 1/2 lime
- A little extra sugar for sprinkling
Put icing sugar and zest in a bowl. Add the lime juice and stir.
Add a little milk and stir into the sugar mixture. Keep adding the milk, 1 tbsp at a time, stirring until the icing is smooth and a fairly thick consistency. You may need to add a little more sugar if the icing is too thin.
Use to drizzle over your favourite cookies and cakes.
