- 2½ cups icing sugar, sifted
- 2 – 3 tbsp rum
- 2 – 3 tbsps lime juice
- ¼ tsp finely grated lime zest
- Additional water if necessary
Put icing sugar and zest in a bowl.
Add the rum and a little lime juice and stir into the sugar. Keep adding the juice, 1 tbsp at a time, stirring until the icing is smooth and a fairly thick consistency. If needed a little water may be needed to achieve the right consistency.
Use to drizzle over your favourite cookies and cakes.
