  • 2½ cups icing sugar, sifted
  • 2 – 3 tbsp rum
  • 2 – 3 tbsps lime juice
  • ¼ tsp finely grated lime zest
  • Additional water if necessary



  1. Put icing sugar and zest in a bowl.

  2. Add the rum and a little lime juice and stir into the sugar. Keep adding the juice, 1 tbsp at a time, stirring until the icing is smooth and a fairly thick consistency. If needed a little water may be needed to achieve the right consistency.

  3. Use to drizzle over your favourite cookies and cakes.
