LIME SHORTBREAD COOKIES

Ingredients

  • 12 oz all purpose flour, sifted
  • 8 oz butter or margarine
  • 5 oz sugar
  • 2 tbsp grated lime zest
  • Juice of 1 lime
  • Pinch of salt
  • A little extra sugar for sprinkling

Directions:

  1. Place flour, sugar and salt in a bowl and mix with a spoon to incorporate all the ingredients.

  2. Using a hand mixer, cream together the butter or margarine with the sugar and lime zest. Add the lime juice. Mix well.

  3. Add the flour and mix to form a dough. Turn the dough out onto a floured surface and form into a disc. Wrap in plastic wrap and refrigerate for half hour – 1 hour.

  4. Preheat oven to 375 degrees F. Lightly grease and flour a baking sheet.

  5. Cut dough in half and place on floured board. Roll out to ½ inch thick. Cut out cookies with a floured cookie cutter and place on prepared baking sheet.

  6. Bake in preheated oven until golden brown. Remove from sheet and place on a wire rack to cool. Sprinkle with a little sugar or drizzle with Lime Rum Icing.
