- 12 oz all purpose flour, sifted
- 8 oz butter or margarine
- 5 oz sugar
- 2 tbsp grated lime zest
- Juice of 1 lime
- Pinch of salt
- A little extra sugar for sprinkling
Place flour, sugar and salt in a bowl and mix with a spoon to incorporate all the ingredients.
Using a hand mixer, cream together the butter or margarine with the sugar and lime zest. Add the lime juice. Mix well.
Add the flour and mix to form a dough. Turn the dough out onto a floured surface and form into a disc. Wrap in plastic wrap and refrigerate for half hour – 1 hour.
Preheat oven to 375 degrees F. Lightly grease and flour a baking sheet.
Cut dough in half and place on floured board. Roll out to ½ inch thick. Cut out cookies with a floured cookie cutter and place on prepared baking sheet.
Bake in preheated oven until golden brown. Remove from sheet and place on a wire rack to cool. Sprinkle with a little sugar or drizzle with Lime Rum Icing.
