  • 1½ cups cornmeal
  • 4 cups water
  • 2 cinnamon sticks
  • 1/2 tsp cinnamon powder
  • ½ cup evaporated milk
  • ½ – ¾ cup condensed milk
  • 1 tsp vanilla essence
  • Pinch of salt


  1. Add the water and the cinnamon stick to a medium pot and bring to a boil. Let boil for a few minutes. Whisk in the cinnamon powder.

  2. Reduce the heat to medium. Using a whisk, slowly add the cornmeal to the water, whisking constantly while adding. The mixture should be smooth.

  3. Continue stirring with the whisk and add the evaporated milk. vanilla essence, salt and condensed milk. The mixture will begin to thicken as the cornmeal cooks. Lower the heat to a simmer.

  4. Remove the cinnamon sticks. Taste the porridge and adjust sweetness if necessary. Serve immediately.
