  • 1 (8oz) cup mango puree
  • ¾ cup milk or water
  • 8 oz margarine
  • 2 oz cookeen
  • 4½ tsp baking powder
  • 4 cups all purpose flour
  • ½ cup cake flour
  • 2 cups granulated sugar
  • 6 eggs
  • 1 tsp grated orange rind
  • ½ tsp pure vanilla extract
  • Pinch of all spice powder
  • Pinch of cinnamon powder
  • 1 tsp lemon juice
  • A little extra cookeen


  1. Grease a large Bundt pan or two regular sized cake pans with a little extra cookeen and dust with flour. Preheat oven to 350 degrees F.

  2. Using an electric mixer, beat together sugar, margarine and cookeen until light and fluffy. In a separate bowl, whip the eggs until light and add to butter mixture and mix.

  3. In another bowl, combine the puree, milk or water, vanilla extract and lemon juice. Add this to the egg mixture. Don’t mix as yet.

  4. Mix together the flour, baking powder, orange rind, cinnamon and all spice powder. Add ½ of the flour mixture to the egg and butter mixture and gently mix just until incorporated. Repeat with the second half mixing gently. When all the ingredients are incorporated, mix on a medium high speed for just about three minutes.

  5. Pour the cake batter into the prepared pans. Bake in the preheated oven for approximately 50 minutes or until a toothpick or knife inserted into the cake comes out clean.

  6. Remove from oven and let rest in pan for a few minutes before turning onto a platter. Let cool completely before serving.
