MARGO’S BANANA BREAD

Ingredients

  • 1½ lbs flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt
  • 11/3 cups evaporated milk
  • 2 cups mashed ripe bananas
  • 1 tbsp vanilla essence
  • ½ lb margarine
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 eggs

Directions

  1. Lightly butter two loaf pans. Preheat oven to 350 degrees F.
  2. Sift together flour, baking powder, baking soda, cinnamon and salt. Set aside.
  3. In a separate bowl, mix together milk, bananas and vanilla essence.
  4. Cream together margarine and sugar.
  5. Add eggs one at a time, beating well after each addition.
  6. Gradually add the dry ingredients to the mixture, alternately with the milk mixture, beginning and ending with the dry.
  7. Pour batter into prepared pans and bake in preheated oven for 1 hour and 15 minutes.
  8. Remove from oven. Let cool for at least 5 minutes before turning out onto a wire rack to cool.
