MARINATED VEGETABLE SALAD

Complexity: Easy

Ingredients:

  • 1½ cup broccoli florets
  • 1½ cup cauliflower florets
  • 1 cup baby carrots
  • 1/3 cup olive oil
  • 1½ tbsp spicy mustard
  • 1 tbsp honey
  • Juice of ½ small lime
  • 2 tbsp balsmic vinegar
  • ¼ tsp red pepper flakes
  • ¼ tsp salt
  • ¼ tsp ground black pepper

Directions:

  1. Bring a medium pot of water to boil. Add the carrots first and allow to cook for two minutes. Add the cauliflower and broccolli and allow to cook for a few more minutes just until tender.
  2. Remove the vegetables from the boiling water and immediately place into a bowl filled with cold water and ice. Pour into a colander and allow to drain.
  3. In a medium bowl, mix together the remaining ingredients. Taste and adjust the seasoning if necessary.
  4. Add the vegetables to the dressing and toss gently, ensuring the vegetables are well coated with the marinade.
  5. Refrigerate for at least half hour before serving.
