- ½ – 1 head iceberg lettuce, chopped
- 2 medium tomatoes, chopped
- ½ red onion, sliced
- ½ cup sliced red or green sweet peppers
- ½ carrot, shredded
- ½ cup corn
- 1 apple sliced
- 2 oz cheddar cheese, cubed
- Pinch of salt
- Pinch of black pepper
- Pinch of dried parsley
- Juice of ½ lime
In a glass bowl, add chopped lettuce, tomatoes, onions, sweet peppers, carrots and corn.
Sprinkle sliced apples with lime juice. Add to bowl.
Sprinkle with salt, pepper, parsley and lime juice. Add the cheese. Toss and serve.
