MOY’S GLUTEN FREE UPSIDE DOWN BANANA FOSTER COFFEE CAKE

Ingredients:

  • 1¼ cups Bob’s Red Mill Cinnamon Bread Mix (sifted to remove raisins)
  • ¼ cup white rice flour
  • ½ cup corn starch
  • 1/3 cup brown sugar
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • 2 eggs (lightly beaten)
  • 1 tbsp apple cider vinegar
  • ½ cup unsalted butter
  • 2 tsp vanilla extract
  • ¾ cup sour cream
  • ¼ cup milk
  • CRUST
  • ½ cup Bob’s Red Mill Honey Oat Granola
  • ¼ cup raisins (from cinnamon bread mix)
  • 2 tbsp butter
  • RUM FLAVORED SYRUP
  • 2 tbsp rum
  • 1 tbsp unsalted butter
  • 1/8 cup of sugar
  • 1/8 cup of water
  • Pinch of salt
  • 2 medium sized bananas (sliced on the length)

Directions:

  1. Preheat the oven to 325 F and grease an 8” baking tin, line the bottom with parchment paper.

  2. Sift about 1 ½ cups of the Bob’s Red Mill Cinnamon Bread Mix to remove the raisins. Set the raisins aside for the crust.

  3. CRUST: Grind the raisins to form a paste, set aside. Pulse the granola in a blender to crush slightly. Add the butter and raisins pulsing to combine until the mixture is sticky but crumbly. Presshe mixture into the base of the baking tin, completely covering the bottom to form a crust. Set aside and prepare the bananas.

  4. RUM SYRUP: Add the ingredients to a saucepan, dissolve the sugar, bring the mixture to a slow boil and reduce to a light syrup.

  5. CAKE: Measure and combine all of the dry ingredients in a bowl and set aside.

    In a separate bowl cream the butter until light and fluffy then add the sugar and whisk until light and cream coloured.  Add the eggs to the butter and sugar mixture, combine well.

    Stir in half of the dry ingredients, then the sour cream, milk, vanilla extract and apple cider vinegar, combine well. Add the remaining dry ingredients to form a thick fluffy batter.

  6. With a pastry bush spread about a 1/3 of the syrup over crust. Arrange the banana slices in a single layer on top of the crust. Spread the remaining syrup over the banana slices. Pour the cake batter into the baking tin.

  7. Bake for 30-35 minutes or until a tooth pick inserted to the centre comes out clean. Remove from pan, allow to cool completely. Serve alone or with a scoop of vanilla ice cream.

    8.Note: Ensure that all of the ingredients are at room temperature before mixing
