MYRNA’S LEMON FILLING

Complexity: Medium

Ingredients:

  • ¾ cup sugar
  • 3 tbsp cornstarch
  • 3 tbsp flour
  • ¾ cup water
  • ¼ cup lemon juice
  • ½ cup orange juice
  • 3 egg yolks
  • 2 tbsp butter
  • 1 tsp grated lemon zest

Directions:

  1. Combine sugar, cornstarch, and flour in a pan and mix well.

  2. In a small bowl, combine orange juice, lemon juice, water and egg yolks. Gradually add to the dry ingredients, whisking until smooth.

  3. Bring to a gentle boil over medium heat, stirring constantly. The mixture will get lumpy but will smoothen.

  4. Turn off heat and mix in the lemon rind and butter.

  5. Transfer to a bowl and let cool a little. Cover with plastic wrap and refrigerate until ready to use.
