- ¾ cup sugar
- 3 tbsp cornstarch
- 3 tbsp flour
- ¾ cup water
- ¼ cup lemon juice
- ½ cup orange juice
- 3 egg yolks
- 2 tbsp butter
- 1 tsp grated lemon zest
Combine sugar, cornstarch, and flour in a pan and mix well.
In a small bowl, combine orange juice, lemon juice, water and egg yolks. Gradually add to the dry ingredients, whisking until smooth.
Bring to a gentle boil over medium heat, stirring constantly. The mixture will get lumpy but will smoothen.
Turn off heat and mix in the lemon rind and butter.
Transfer to a bowl and let cool a little. Cover with plastic wrap and refrigerate until ready to use.
