Oat and Raisin Cookies

  • 8 oz margarine
  • 1½ cups flour
  • 1 cup sugar (1/2 cup brown and ½ cup white)
  • 1 tsp baking soda
  • 3 cups quick cooking oats
  • 2 eggs
  • 1 tsp vanilla essence
  • ¾ cup raisins
  • Few dashes bitters
  • ½ tsp ground cinnamon
  • Pinch of salt


  1. Cream the butter and margarine together until light and fluffy. Add the eggs one at a time, beating well after each addition.
  2. Add the essence and bitters.
  3. Sift the flour and baking soda and add to the butter mixture. Add the oats, cinnamon, raisins and salt. Mix well.
  4. On an ungreased cookie sheet, drop the dough by tablespoons onto sheet leaving a little space between each. Bake in a preheated 350 degree F oven for 12 – 15 minutes or until golden brown.
  5. Remove from oven and let cool on the sheets for 2 – 3 minutes before placing cookies on a wire rack to cool completely. Store in an airtight container or jar.
