OATMEAL PONE

Complexity: Easy

Ingredients:

  • 3 cups oats
  • 1 cup raisins
  • ¼ cup cranberries
  • ¼ cup coconut flakes
  • 2 tsp baking powder
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon
  • 2 cups pumpkin puree
  • 1 egg
  • 2 tbsp coconut oil
  • 1 tbsp vanilla essence
  • ¼ cup chopped nuts for the top
  • ½ cup almond milk
  • TOPPING
  • ¼ cup slivered almonds
  • ¼ cup chocolate chips

Directions:

  1. For the pumpkin: Simmer sliced pumpkin in water with cinnamon until soft and mash. Let cool.
  2. Mix all dry ingredients together. Add wet ingredients . Mix until just combined.
  3. Spread mixture evenly in a lightly greased baking tray. Sprinkle with almonds and chocolate chips, pressing into the pone mixture.
  4. Bake in a preheated 350 degree F oven for 30 – 35 minutes. The pone will have a gooey texture.
  5. Let cool and cut into serving pieces.
