OPEN FACED SMOKED SALMON BREAKFAST SANDWICHES

Complexity: Easy

Ingredients:

  • 4 – 6 slices multigrain bread
  • 6 – 8 smoked salmon slices, cut in strips
  • Slices of cheddar cheese
  • 4 hardboiled eggs, peeled and quartered and halved
  • ¼ cup diced sweet pepper
  • Lettuce, chopped
  • Thin slices of red onion
  • Mayonnaise
  • Black pepper
  • Mustard
  • Pepper Sauce (optional)

Directions:

  1. Toast the slices of bread.

  2. Spread on one side with the mayonnaise

  3. Top with the slices of cheddar cheese. Drizzle the cheese with a litlle mustard and pepper sauce if using.

  4. Top with salmon, letttuce, peppers, eggs and onions. Sprinkle with a pinch of black pepper.

  5. Serve.
