- 4 4oz skinless salmon fillets
- 3 – 4 tbsp basil pesto (we used Del Mano’s)
- ½ tsp salt
- ½ tsp black pepper
- Juice of 1 lime
- Cooking spray
Place the salmon fillets in a bowl.
Season with the pesto, salt, black pepper and lime juice. Ensure the salmon is well covered with the pesto. Let marinate for ½ hour to 1 hour.
Preheat the oven to 375 degrees F.
Spray a broiling rack with cooking spray. Place the salmon on the rack.
Place in the preheated oven and cook for 10 – 12 minutes or until the salmon is just cooked. Remove and serve.
