• 1 whole chicken cut up into 10-12 pieces
  • 2-3 cloves of garlic, crushed
  • 1 tsp grated ginger
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tbsp green seasoning
  • ΒΌ evaporated milk
  • 2 large eggs, beaten
  • 2 cups of flour
  • 2 cups breadcrumbs
  • Salt and pepper
  • 2 tbsp vegetable oil


  1. Remove skin from chicken pieces. In a large bowl season chicken with garlic, ginger, cayenne pepper, paprika and green seasonings. Marinate for 6 hours or overnight.
  2. Set up a breading station: place flour in one bowl with a pinch of salt and black pepper, mix milk and eggs in another bowl, and place breadcrumbs in a final bowl.
  3. Bread chicken by first dipping individual pieces in flour shaking off excess; then dip in milk and egg mixture; and finally coat chicken pieces with breadcrumbs.
  4. Transfer chicken pieces to an oiled oven rack and in a pre-heated oven bake for 30-40 minutes or until chicken is crispy on the outside and cooked through. SERVE
