Ready in: 45 minutes
- 4 cups cornmeal
- ¼ lb shortening
- ¼ lb margarine
- 1 dry coconut grated
- 1½ cups sugar
- 1 tsp salt
- Pinch ground spice and nutmeg
- ¼ lb raisins (optional)
- 1 tsp bitters
- Warm water
- Banana leaves heated and cut in squares
- Cotton thread to tie
- ½ lb pumpkin (grated)
In a large mixing bowl put butter, shortening, sugar, cornmeal, coconut, pumpkin and spice bitters, raisins and mix well to incorporate all ingredients.
Add water a little at a time to make firm dough.
Wipe banana leaves with damp cloth.
Oil leaves with a pastry brush.
Place about 2-3 tablespoons of mixture on a leaf and tie firmly to avoid water seeping in. Continue until all ingredients are used up.
Place in pot of boiling water and cook for approx. 45 min. Drain and cool.
