PASTA SALAD WITH VINAIGRETTE

Complexity: Easy

Ingredients:

  • 1 pack of elbow macaroni
  • ΒΌ cup vegetable oil
  • 1 tbsp white wine vinegar
  • 1 tbsp mustard
  • 2 tbsp granulated sugar
  • Salt
  • Black pepper
  • 1 tsp all purpose seasonings
  • 1 onion, finely chopped
  • 3 cloves of garlic, grated
  • 1 bell pepper finely chopped
  • 1 carrot, grated
  • 1-cup corn kernels
  • 4-5 blades of chives, chopped
  • 2-3 blades shadon beni

Directions:

  1. Cook pasta according to package directions (8-10 minutes) in salted water. Strain and set aside.
  2. Mix oil, vinegar, mustard, sugar, a pinch salt, pepper and all purpose seasonings.
  3. In a large bowl toss pasta, vinaigrette dressing and remaining ingredients. Mix thoroughly.
  4. Refrigerate, until ready to serve.
