PEANUT BUTTER AND JELLY COOKIES

Ingredients

  • 8 oz butter
  • 1 cup peanut butter
  • ¾ cup sugar
  • ½ cup brown sugar
  • 2 eggs, lightly beaten
  • 1 tsp vanilla essence
  • 2½ cups all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup guava jelly (or flavor of your choice)
  • Cooking spray

Directions

  1. Sift together the flour, baking soda and salt in a bowl. Set aside.

  2. In another bowl, mix together the butter, peanut butter, sugars, eggs and vanilla essence. Add the flour mixture to the butter mixture and mix well.

  3. Preheat the oven to 375 degrees F. Spray a baking sheet lightly with cooking spray.

  4. Roll the dough into even sized large balls and place on the sheet. Press down slightly. Make an indentation with the end of a wooden spoon and just widen the hole a bit. Do not let the indentation go right through.

  5. Fill with a little jelly being careful to not put too much.

  6. Bake for 15 – 20 minutes or until the biscuits are golden brown. Depending on the size of the cookies the baking time may be less or more. Remove and let cool on a wire rack before serving.
