Complexity:  Easy


  • 1 large bag black pepper prunes
  • 3 – 4 large cloves garlic, finely chopped
  • 3 – 4 blades shadon beni
  • Small piece of hot pepper (scotch bonnet), optional
  • Tequila or Brandy


  1. Place the prunes in a large bowl.

  2. Add the garlic, shadon beni and pepper. Mix well.

  3. Place the mixture in a jar. Add enough tequila to cover the prunes. Cover with the lid and shake well.

  4. Let rest for a few hours before serving. Of course the longer the prunes sit the more flavor is absorbed.
