  • 6 large potatoes, peeled and cut in large dice
  • 1 can whole kernel corn, drained
  • 1 sweet pepper, seeded and diced
  • 1 small jar pesto, approx 4 tbsp
  • 2- 3 tbsp mayonnaise
  • 1/4 onion finely grated
  • 1 tbsp mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp pepper sauce
  • Pinch of sugar


  1. Boil the potatoes until tender. Drain in a colander and set aside.

  2. In a large bowl, mix together the pesto and mayonnaise, grated onion and mustard.

  3. Add salt, sugar, black pepper and pepper sauce. Mix well, taste and adjust seasoning if necessary.

  4. Add the corn and sweet pepper to the pesto sauce. Mix well.

  5. Add the potatoes and mix in gently ensuring that everything is well incorporated. Taste and adjust seasoning if necessary. Cover with plastic wrap and refrigerate until ready to serve.
