  • 3 lbs pig feet,chopped
  • 6 cloves garlic
  • 6 – 8 limes juiced
  • 1 tbsp salt
  • 1 tbsp sugar
  • 1 large onion,sliced
  • Celery cut finely
  • Shadon beni cut finely
  • Water cress (optional)
  • 4-6 cups water
  • 1 cucumber, seeded and sliced
  • Piece of hot pepper


  1. Boil pig feet with salt & 3 cloves garlic until tender (pressure cook if possible). Cool.

  2. In a large pyrex bowl add water (6-8 cups), lime juice, salt, 3 cloves garlic cut up and all other ingredients except cucumbers.

  3. Wash each piece of pig foot thoroughly and add to lime mixture. Taste and adjust if necessary.

  4. Add cucumber and water cress for garnishing. Let it rest preferably overnight so flavours will develop. Serve either cold or at room temperature.
