Complexity: medium

Ingredients:

  • 6 tins condensed milk
  • 6 tins evaporated milk
  • 1 dozen eggs, beaten
  • 1 large bottle dark rum
  • 1 tsp fresh grated nutmeg
  • Few dashes bitters
  • 3 – 4 sticks cinnamon
  • Peel of 1 lime

Directions:

  1. In a large pot add the eggs, milk, cinnamon sticks and lime peel.
  2. Place over a low heat and whisk constantly. After 15 – 20 minutes, mixture should begin to thicken. Set aside to cool. Remove lime peel and cinnamon sticks.
  3. Using a blender, mix together the milk mixture and the rum in parts. Add the bitters and grated nutmeg and stir.
  4. Taste and adjust if necessary. Strain and bottle. Refrigerate until ready to serve.
