PUMPKIN BREAD

Ingredients

  • 2½ cups sugar
  • 1 cup oil
  • 4 eggs, lightly beaten with a small piece of lime skin
  • ¼ lb pumpkin, cooked and mashed
  • 3½ cups all purpose flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp ground nutmeg
  • 1 tsp all spice powder
  • 1 tsp cinnamon
  • ½ tsp ground cloves
  • 2/3 cup water
  • 1/2 cup cherries, cut up (optional)

Directions

  1. Lightly butter two loaf pans. Preheat oven to 350 degrees F.

  2. In a large bowl, mix sugar and oil.

  3. Add pumpkin and eggs (lime skin removed) and blend well.

  4. Add flour, spices and water.Add the cherries if using. Mix until everything is just incorporated.

  5. Pour into the prepared pans and bake in preheated oven for 1 – 1½ hours or until it is done.

  6. Check to see if its done by using a knife insert in center. Knife should come out clean. Let rest in pans for a few minutes before turning out onto a wire rack to cool completely.
