Coconut Curry Duck

  • 3 lbs duck
  • 1/4 cup Trini green seasoning
  • 3 med onion diced
  • 6 clove garlic diced
  • 4 tbsp Chandon beni
  • 1 tbsp oil
  • 1 hot pepper
  • 1 bay leaf
  • 1 cup coconut water
  • 1/4 cup curry powder
  • 2 tsp salt
  • 2 tsp black pepper
  • 1 tbsp brown sugar


  1. Wash and clean duck, season with green seasoning half of the onion, half of the garlic ,1 tbsp curry powder salt and black pepper and chadon beni set aside leave to marinate for about 15min
  2. mix curry powder with sugar and water to form a paste.
  3. In a sauce pan add oil, sauté remaining garlic onion bay leaf and hot pepper for a few min, add curry paste and cook for few min until curry is cooked
  4. add duck and coat with curry mixture allow to cook for 15min, add coconut milk water and cook for a further 30 min or until duck is tender, taste and adjust seasoning salt and black pepper as needed
  5. Serve with jasmine rice or paratha
