- 2 – 3 medium to large tomatoes, sliced
- Slices of mozzarella cheese
- 2 – 3 tbsp ready made basil pesto
- (we used Del Mano’s)
- Chopped romaine lettuce or arugula
- Salt and pepper
- Juice of lime (optional)
Place lettuce on salad serving platter. Drizzle with a little lime juice if using.
Sprinkle the tomato slices with a little salt and pepper.
Layer alternately, slices of tomato and mozzarella.
Drizzle the basil pesto over the slices.
Cover with plastic wrap and refrigerate until ready to serve.
