  • 4 cups flour
  • 4 tsp baking powder
  • ¾ tsp salt
  • ½ oz shortening
  • 2 – 21/2 cups water
  • Oil for frying


  1. Sift flour, salt and baking powder into bowl. Add shortening. Blend shortening into flour, crumbling between fingers to ensure it is well blended. Add enough water to make soft dough. Knead dough until smooth, just a few minutes. Let rest for ½ hour.
  2. Form dough into small balls and on a floured surface, roll into circles with floured rolling pin.
  3. Heat oil in frying pan over medium heat. Add bake to oil.
  4. When the dough has puffed up, flip over to next side and fry until golden brown.
  5. Drain on paper towels. Serve with your favourite fillings.
