RELLA’S MEATBALL SANDWICHES

Ingredients:

  • 1 loaf ciabatta bread, cut in four and halved
  • (You can also use regular bread rolls)
  • 12 – 14 cooked meatballs
  • Spaghetti /Tomato sauce
  • Sauteed vegetables
  • Slices of mozarella cheese
  • Slices of cheddar cheese
  • Pepper sauce and mustard, optional
  • Cooking spray

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Place the 4 bottom halves of the ciabatta on a baking sheet, lightly sprayed with cooking spray. Spread the mustard on the bottom half and then top with slices of cheddar cheese.
  3. Top with the meatballs, average 3 per sandwich, may be more depending on the size of the meatballs. Spoon a little sauce over the meatballs and then the mozarella cheese.
  4. Cover with the top half of the bread and place in the preheated oven. Bake for approximately 5 – 7 minutes or just until the mozarella cheese melts.
  5. Remove and serve while still warm.
  6. For the sauteed vegetables: Saute some sweet peppers, onions and mushrooms together and season with a little salt and pepper.
