- 6 – 8 hot dog sausages
- 2 – 3 large sweet peppers
- Olive oil
- Black pepper
- Cooking spray
Slice the saussages diagonally into ½ inch slices.
Seed the peppers and cut into chunks. The chunks should match the size of the sausage slices.
Line a small baking tray with foil and lightly spray with cooking spray. Place the peppers on the tray and drizzle with a little olive oil. Sprinkle with a litlle salt and pepper. Roast in a preheated 400 degree F oven for approximately 8 – 10 minutes or until the peppers are tender and the edges are slightly charred.
While the peppers are roasting, heat a little olive oil in a frying pan over medium high heat. Saute the sausages on both sides until lightly browned. This will only take a few minutes.
Pair each sausage sllice with a roasted pepper on a toothpick. Serve with a creamy dipping sauce.
