  • 3 cups flour
  • 3 tsp baking powder
  • ¾ lb saltfish (salted cod)
  • 2 tbsp minced green seasoning (chives, onion, garlic, thyme)
  • 1 ½ tsp sugar
  • Few dashes pepper sauce
  • 1 tsp Worcestershire sauce
  • Water
  • Oil for deep frying


  1. Soak the saltfish in water for a few hours, changing the water at least 3 times. Taste and soak again if necessary. Strip the fish and remove bones, if not using boneless saltfish.
  2. Mix together flour, baking powder, sugar, green seasoning and saltfish. Combine well.
  3. Add enough water to make a soft but not runny batter. Add pepper sauce and Worcestershire sauce.
  4. Heat oil in pot. When hot, drop by tablespoons into the oil and fry until golden brown. 5. Drain on absorbent paper. Serve with favourite dip or as a side dish.
