SCRAMBLED EGGS WITH SMOKED SALMON & MUSHROOMS

Ingredients

  • 3 eggs
  • 3 – 4 tbsp milk or half and half
  • 2 – 3 slices smoked salmon, diced
  • ½ cup fresh chopped mushrooms
  • 2 tbsp minced chives
  • Pinch of salt and pepper
  • 1 tbsp butter

Directions:

  1. Break the eggs into a bowl. Add the milk, chives and a little salt and pepper and beat well.

  2. Melt the butter over medium heat in a non stick pan. Add the mushrooms and cook for a few minutes until tender.

  3. Mix in the smoked salmon to the mushrooms.

  4. Add in the eggs and stir gently with a spatula until cooked to your desired texture. You can lower the heat at this point and cook for a soft scramble.

  5. When eggs are cooked, remove from heat and serve immediately
