- 3 eggs
- 3 – 4 tbsp milk or half and half
- 2 – 3 slices smoked salmon, diced
- ½ cup fresh chopped mushrooms
- 2 tbsp minced chives
- Pinch of salt and pepper
- 1 tbsp butter
Break the eggs into a bowl. Add the milk, chives and a little salt and pepper and beat well.
Melt the butter over medium heat in a non stick pan. Add the mushrooms and cook for a few minutes until tender.
Mix in the smoked salmon to the mushrooms.
Add in the eggs and stir gently with a spatula until cooked to your desired texture. You can lower the heat at this point and cook for a soft scramble.
When eggs are cooked, remove from heat and serve immediately
