Complexity: Easy


  • 1 head romaine lettuce, chopped
  • 1 sweet pepper, seeded and thinly sliced
  • ½ small red onion, thinly sliced
  • ½ cup whole kernel corn
  • 2 – 3 tomatoes, diced
  • 3 hard boiled eggs, cut in chunks
  • Juice of 1 lime
  • Salt and black pepper
  • Dressing of choice


  1. Place the lettuce in a large salad bowl. Drizzle with lime juice and sprinkle with a little salt and pepper. Toss well.

  2. Add the remaining vegetables and toss well together. Refrigerate until ready to serve.

  3. When ready to serve, place the salad in serving bowls and top with the eggs and drizzle with a little dressing.
