- 5 – 6 boneless smoked herring fillets
- 1 – 2 cloves garlic, finely minced
- 1 small onion, minced
- 1 tsp lime juice
- ½ scotch bonnet pepper, finely chopped
- 2 – 3 tbsp oil
Place the herring in a large pot of water and bring to a boil. Let boil for approximately 5 minutes and then drain.
Place in a heatproof bowl. Using a fork, mash the fillets until very flaky. Mash with a fork or potato masher.
Add the onion, garlic, lime juice and hot pepper.
Heat the oil (2 – 3 tbsp) and throw over the herring mixture. Mix well ensuring that everything is well incorporated. Taste and adjust seasoning. Serve with sada roti or fried bake.
