SPICY CHINESE WINGS WITH CREAMY DIPPING SAUCE

Ingredients:

  • CHICKEN WINGS
  • About 20 whole chicken wings
  • 2 tbsp of chinese five-spice powder
  • 1 tbsp of cayenne pepper
  • Salt and pepper to taste
  • 2 – 3 tbsp olive oil
  • Flour for coating
  • Extra oil for frying
  • CREAMY DIPPING SAUCE
  • ½ cup of fresh chives
  • 1 tsp chopped shadon beni
  • ¼ cup sour cream
  • ¼ cup of mayonnaise
  • ¼ teaspoon of mustard
  • Juice of ½ lemon
  • Salt and black pepper to taste

Directions

  1. Prepare wings – Wash in a little lime water before seasoning. Cut off wing tips and cut wings in half at the joint. Throw away wing tips. Place wings in large bowl, sprinkle oil,five spice powder and cayenne powder all over wings, add generous pinches of salt and black pepper. Use hands and rub mixture all over wings ensuring it is properly coated. Ideally leave overnight or for at least 1 hour before cooking.

  2. Heat oil in a pan over medium high heat. Lightly toss the wings in the flour. Place wings a few at a time in the hot oil and fry until cooked through, browned and crispy. Serve hot with creamy dipping sauce.

  3. Creamy Dipping Sauce – Combine all sauce ingredients in a mixing bowl and whisk to incorporate fully. Season with salt and black pepper to taste.
