SPICY SHRIMP SALAD

Complexity:  Easy

Ingredients:

  • 1 lb medium or large shrimp, peeled and deveined
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • 1 tsp cumin
  • Juice of 1 lime
  • SALAD
  • Romaine lettuce, chopped
  • Arugula lettuce
  • Tomatoes, quartered
  • Cubes of feta cheese
  • Sliced red onion
  • Hard boiled eggs, quartered
  • Sweet pepper slices

Directions:

  1. Season the shrimp with the salt, black pepper, cayenne pepper, paprika, cumin and lime juice. Toss well and let marinate for half hour.

  2. Place the salad ingredients in a large bowl or individual serving bowls. Sprinkle with a pinch of salt , black pepper and a squeeze of lime juice. Refrigerate until ready to serve.

  3. Heat 2 – 3 tbsp oil in a frying pan over medium high heat. Cook the shrimp in a even layer in the oil , turning the shrimp over after two minutes. Remove shrimp when cooked.

  4. Place the shrimp on top the salad and serve with dressing if desired.
