Tamarind Balls

     Origin: Trinidad


  • 6 cups shelled tamarind
  • 1 lb sugar
  • ¼ tsp salt
  • ¼ tsp baking soda
  • 1 tsp pepper sauce
  • Extra sugar for rolling


  1. Place all ingredients in a bowl and mix with hands until the sugar and tamarind flesh are well incorporated and can be shaped into a firm ball.
  2. Taste the mixture and add more sugar or pepper if necessary according to taste.
  3. Form into small balls and roll in extra sugar.
